Which pets are we allowed to edit, and where are the PSD files for each of them? I have some cool ideas, but I have never done a pet edit. Also, how do you know when you hit 50%?

You can get PSD files for the downtime SCC's here Alt and Event Lines. Normally you get to that thread through Help > All Pet Genuses > Alt & Event Linearts, button at the top of the page. As for how edited, you'll have to run it by Skitty's Crystal Check thread in the forums if you're in doubt about percentage.
