Robin Hobb, any of her books in or surrounding the Farseer trilogy. Especially the dragon ones. She's a gorgeous writer, and her characters have real depth. Plus the things she thinks of are brilliant.

Prospero's Children by Jan Siegel is one of the best books I've ever read, and I've read it more than once. Its a complex fantasy with mystery, romance, and murder; everything one loves in a story :P There are some really unique, awesome characters, too, that you won't see anywhere else.
It basically revolves around a young female protagonist who moves with her family into an old inherited home in the country and begins to encounter many strange happenings as she comes to realize not only the great history around the estate, but also the fact that her father's very likely dating an evil sea witch.

I think my favorite would be The Neverending Story by Michael Ende. The imagery is some of the most colorful and fantastical I've ever read, and as an artist I find it really inspiring.

I think I'd have to say Mastiff by Tamora Pierce. It's the last book in the Beka Cooper trilogy and it's really fantastic. I may have cried a bit..

Artemis Fowl - it's freaking amazing. Not only is it interesting, but also hilarious, and really hard to put down. One of the best series I've ever read. The characters are fairly relatable and very likable.

Out of everything, my favorite series has been Demonata, by Darren Shan. To pick one book in the series to be the ultimate would be Bec, Book Four. This series had, what I considered, an amazing plot with fantastic twists and turns. It broke my heart and thrilled me with terrors of demons and magicians.

The Cry of The Icemark by Stuart Hill. It's a fantasy read for teens to adults, it paints a very captivating picture of the world the characters live in. It's all action from the first chapter :D Plus: It's based off of VIKINGS how awesome is that?

I love so many books, some of which I have seen already recommended by others here...
If you haven't read them I would always recommend The Dragonriders of Pern books by Anne McCaffrey, there are many books in this series which spans many time frames, one trilogy (which plays a part in the bigger series) The Harper Hall trilogy, which begins with the book Dragonsong is especially touching.
The Crystal Singer series also by Anne McCaffrey is a great read too.
Anne McCaffrey is a brilliant writer who manages to draw you in and engage you emotionally with her characters and story lines, once you start reading them it is very difficult to put her books down!

If you need some new books to peruse
dear fellow, there's plenty to choose
from Discworld to Sandman
by Pratchett and Gaiman,
they're masters of tales; you can't lose.
My favourite's their collaboration
'Good Omens', a tale of damnation,
of witchcraft and wonder,
with humour and blunder,
and angels and demons, salvation.
:D Seriously - Good Omens, by Terry Pratchett and Neil Gaiman. Very funny and an excellent read.

The Warded Man by Peter V. Brett is a book that I just recently got and read. Pretty awesome book (In my opinion) it's sort of a Horror/Fantasy book. At first it seems to be set in older times but once you get farther into it you realize that it's way into the future but all technology was destroyed in the Demon Wars. Not going to explain anymore because I don't want to spoil anything >_>
Leven Thumps and the Gateway to Foo by Obert Skye was a pretty good book too. It's a fantasy novel that's set more in modern times don't really know how to explain this one so I'm just going to leave it at that.
And then my last suggestion for a book would be either any of the Artemis Fowl books by Eoin Colfer. The Artemis Fowl series is a fantasy novel set in more modern day settings and it revolves around a kid genius called Artemis I'm pretty sure he's 12 in the first book. In the first book he's basically trying to discover Fairies, Leprechauns, etc so he can steal they're gold and I don't really remember much about the rest of the books >_>
